Vegan Pad Thai with Soy Curls

Lacey (@avocadosandales) created a hearty, vegan Pad Thai using our Pad Thai Kit. In less than 15 minutes, you can have a well-rounded, bright and delicious meal with depth of flavor and umami notes.

  • 2 boxes Nona Lim Pad Thai Kits

  • 2 tbsp rice vinegar

  • 2 tbsp ketchup 

  • 1 tbsp sugar

  • 1 large carrot, shredded

  • 2 cups Butler Foods soy curls, rehydrated (substitute seitan or tofu) 

  • 1/2 yellow onion, minced

  • 1/2 large green pepper, diced

  • cilantro, peanuts, and lime for garnish


  1. Mix ketchup, rice vinegar, and sugar into a bowl with pad thai sauces from Nona Lim Pad Thai Kits.

  2. Heat 2 tbsp vegetable oil over high heat in a large wok. Add soy curls, onion, pepper, and carrots. Cook for several minutes until onions have softened, then add noodles. Pour sauce over top, and heat until noodles are fully cooked and sauce is thick, about 8 minutes. 

  3. Top with cilantro, peanuts, and limes.
