+ 1 pouch Nona Lim Vietnamese Pho Bone Broth or Nona Lim Miso Broth (vegan)
+ 1 pack Nona Lim Pad Thai Noodles
+ 3 shiitake mushrooms, sliced
+ 3 bok choi, halved
+ 1 tofu, cubed
+ 1/2 snap peas, sliced


+ Chopped cilantro
+ Lime wedges


  1. Prep veggies as described. Set aside
  2. Open Pad Thai pouch and place noodles on a microwavable plate. Cover with a wet paper towel and microwave on high for 4 minutes.
  3. Open broth pouch and heat until boiling. 
  4. Add the veggies and blanch in the broth until just cooked, 1-2 minutes each.
  5. Divide noodles into 2 bowls and fill with broth. Top with desired toppings and garnishes.
