Ingredients+ 1 pouch Nona Lim Carrot Ginger Soup
+ 1 medium onion-sliced or chopped
+ 1 carrot-chopped into small cubes
+ 1 clove garlic, minced
+ 1 1/2 cup shredded rotisserie chicken
+ 1 cup Arugula
- Saute onion, carrot, and garlic in hot olive oil in saucepan for 5-7 minutes.
- Stir in chicken pieces to warm.
- Pour pouch of Nona Lim Carrot Ginger Soup over and stir to warm.
- Add arugula and stir until soft.
- Serve over brown or white rice.
- Add Salt and pepper to taste.
