Serves 2 

Ingredients

+ 1 pouch Nona Lim Carrot Ginger Soup
+ 1 medium onion-sliced or chopped
+ 1 carrot-chopped into small cubes
+ 1 clove garlic, minced
+ 1 1/2 cup shredded rotisserie chicken
+ 1 cup Arugula

    Instructions

    1. Saute onion, carrot, and garlic in hot olive oil in saucepan for 5-7 minutes.
    2. Stir in chicken pieces to warm.
    3. Pour pouch of Nona Lim Carrot Ginger Soup over and stir to warm.
    4. Add arugula and stir until soft.
    5. Serve over brown or white rice.
    6. Add Salt and pepper to taste.
